Sweet Potato Apple Cider Stew

This Recipe is gluten free and vegan and can also be turned into a creamy soup. See end notes. 

Sweet Potato Apple Cider Stew 

Serves 4 ,   

3 to 4 hr high in crock pot 6-8 hrs low in crock pot or 2 hrs on a stove top

-----Main ingredients-----

3 good sized Parsnips, peeled, & quarter or half so they are 1/2" thick by about 1" to 2" inch long 

2 med sized sweet potatoes, peeled and cut into 1" chunks.

1 med onions, cut up either quarter it or 1/8 it (I like smaller to get a little of everything in one bite.)

2 cups apple juice 

-----spices-----

2 or 4 garlic cloves sliced thin (I love garlic)

2 Tablespoons of Whole grain brown mustard

1 teaspoon dried Thyme

3/4 teaspoon salt

--wassail spices--

1 teaspoon brown sugar

1 Allspice berry whole

A pinch of clove powder

1/8 teaspoon nutmeg 

1/4 teaspoon cinnamon

The juice from a tangerine or 1/4 cup oj

----------25 min before cooking time is up---------

1 Tablespoon corn starch

2 Tablespoons cold water

1 large apple or 2 small cored and sliced

Optional 1/4 cup sour cream or Greek yogurt (I use vegan (1 tablespoon per serving)(I use vegan))

Directions

Combine main ingredients plus spices, including wassail spices, in to a slow cooker 5 or 6 quart or a short stock pot. 

25 min before done dissolve cornstarch with water then add to pot mix well then add apple(s) 

Add a Table of sour cream or Greek yogurt per serving.

Cover and cook till fork tender. 3 to 4 hr high in crock pot 6-8 hrs low in crock pot or 

Stove direction 2 hrs on stove first bring to boil then reduce to Low/ medium stirring occasionally. On simmer for last 10 min.

If you have person with a texture issue who will eat creamed soup. When done cooking, Pour into a blender (leave steam vent center cap open don't over fill) and blend. May have to divide to do all of it. You can also use and immersion blender. 

If you make my recipe for Wassail you can omit the wassail spices and just use wassail in place of apple juice. 

Secrets to speed up everything

If you pre roast veggies and store them in your freezer or fridge you can speed cooking time and add a depth of flavors.
